Earlier this month, Hog Roast Tiverton catered a wedding for 80 guests, and with a number that size, you can pretty much guarantee a whole spread of dietary needs to juggle. Meat lovers, vegetarians, vegans, a few allergies thrown in for good measure. Our job was making sure everyone felt equally looked after, and honestly, we think we nailed it.
The couple had chosen our Southern Slow Roast Menu, which pulls its inspiration straight from America’s Deep South. Think Louisiana, Texas, Tennessee, big bold flavours with real soul behind them, the kind of food that gets people talking and passing plates around the table.
As always, the meat got the full treatment. Everything was marinated ahead of time, then cooked low and slow over the grill until we had BBQ pork butt, Texan beef brisket and pulled minted lamb filling up the chafing dishes one after another. Non-meat-eaters weren’t forgotten either, with vegetarian sausages and BBQ-pulled jackfruit on offer, plus rolls and wraps for anyone wanting to build their own sandwich from scratch.
But we’d argue it was the sides that really brought it all together. Three sauces ranging from smoky-sweet right up to properly spicy were served alongside indulgent mac and cheese, homemade coleslaw, roasted veg and sweet potato fries, giving guests plenty to pile onto their plates.
Nobody went hungry and nobody felt like they’d been left off the guest list when it came to the food. Hog Roast Tiverton delivered exactly what we promised, and the compliments kept rolling in well into the night.
