
Our talented trio of Catering Managers Rob, Harry, and James were at the helm for this event, bringing their expertise, energy, and signature service to the party. As guests began to arrive, the irresistible aroma of slow-roasted meats filled the air, setting the stage for an unforgettable feast.
The menu was built around bold, Southern-style flavours, starting with our Texan 24-hour beef brisket, cooked low and slow until beautifully tender. Alongside it, we served Cajun-spiced whole roast chickens and our fall-off-the-bone Louisiana sticky pork ribs each one a smoky, saucy triumph. Guests could load up fresh bread rolls and wraps (including gluten-free options on request), topping their choices with a range of our signature sauces, from the smokey sweet BBQ glaze to the fiery Cajun hot pepper sauce, and the crowd-favourite Hickory Bourbon BBQ sauce.

The full spread included a seasonal green leaf salad, our homemade gourmet coleslaw, and a hearty helping of sweet potato and traditional fries, all served buffet-style on eco-friendly bamboo crockery with wooden cutlery and quality napkins.
It was a relaxed, joy-filled evening with great food, even better company, and plenty of happy faces. Watching friends and family come together to celebrate such a meaningful occasion is exactly why we love what we do.
